Meal Maker Masala Curry: How to Make a Spicy, Protein-Rich Vegetarian Curry

Full English News Article

Meal Maker Masala Curry is a flavourful vegetarian dish made with soya chunks and a rich blend of Indian spices. It is a good option for people looking for a hearty alternative to meat-based curries. The dish pairs well with steamed rice, bagara rice, pulao, biryani, chapati, roti and puri.

Soya chunks are a source of protein. Preparing them properly before adding them to the gravy helps improve their texture and allows them to absorb the spices more effectively.

Ingredients

  • 1 cup meal maker (soya chunks)
  • 2 medium onions, finely chopped
  • 2 medium tomatoes
  • 1 tablespoon ginger-garlic paste
  • ¼ teaspoon turmeric powder
  • 1½–2 teaspoons red chilli powder
  • Salt to taste
  • 3–4 tablespoons cooking oil
  • 1 bay leaf
  • 3 cloves
  • 1 small piece of cinnamon
  • 2–3 green chillies
  • Curry leaves and fresh coriander
  • 1 teaspoon kasuri methi
  • Hot water as required

For the special masala paste:

  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon poppy seeds
  • 6–8 cashew nuts
  • 3 cloves
  • 2 cardamom pods
  • ½-inch piece of cinnamon

Preparation Method

1. Prepare the soya chunks

Bring water and half a teaspoon of salt to a boil. Turn off the heat, add the soya chunks and cover for 10 minutes. Drain, rinse with cold water and squeeze out the excess water thoroughly.

2. Make the masala paste

Grind the coriander seeds, cumin, poppy seeds, cashews, cloves, cardamom and cinnamon with a little water to form a smooth paste.

3. Fry the aromatics

Heat oil in a pan. Add the bay leaf, cloves, cinnamon, green chillies and curry leaves. Add the chopped onions and fry until golden brown. Stir in the ginger-garlic paste and cook until its raw smell disappears.

4. Prepare the gravy

Add turmeric, chilli powder and salt. Stir in the ground masala paste and tomato purée. Cook over low to medium heat for 4–5 minutes, until the masala is well cooked and oil begins to separate.

5. Add the soya chunks

Add the prepared soya chunks and fry for about 2 minutes so they become coated with the masala. Pour in 1–1½ cups of hot water, mix well and cover. Simmer over medium heat for 5–7 minutes until the gravy thickens.

6. Garnish and serve

Crush the kasuri methi between your palms and add it to the curry along with chopped coriander. Turn off the heat and serve hot.

Serving Suggestions

Serve the curry with steamed rice, bagara rice, pulao, biryani, chapati, roti or puri. Adjust the amount of water according to whether you prefer a thick gravy or a lighter curry.
