Dried red chillies can sometimes taste hotter than fresh chillies because drying removes much of their water content. As moisture decreases, capsaicin and other compounds responsible for chilli heat can become more concentrated relative to the chilli’s weight.

The Telangana Food Processing Society (TGFPS) has highlighted this food-science concept to explain how drying affects agricultural produce during processing.

Why Does Reduced Moisture Increase Perceived Heat?

Fresh chillies contain substantial moisture. During drying, water evaporates, reducing the chilli’s weight and moisture content.

If the capsaicin content remains relatively stable during the process, the dried chilli may contain a higher concentration of capsaicin per unit of weight than the fresh chilli. This can make dried chillies seem hotter when equal weights are compared.

What Determines Chilli Heat?

Chilli heat is primarily associated with capsaicin and related capsaicinoids. The chilli variety, growing conditions, maturity and processing method can all influence its heat level, colour and flavour.

Not every dried chilli is hotter than every fresh chilli. The actual difference depends on the variety and its original capsaicinoid content, as well as how the chilli is processed.

Why Drying Matters in Chilli Processing

Drying helps reduce moisture and makes chillies easier to store and transport. When combined with appropriate packaging and storage, it can help maintain product quality and reduce spoilage risks.

For agricultural products such as Guntur red chillies, drying, quality control, packaging and marketing contribute to value addition across the food supply chain.
