మైసూర్ బోండా అంటే చాలా మందికి ఇష్టమైన సాయంత్రం చిరుతిండి. బయట హోటళ్లలో లభించే ఈ బోండాలను ఇంట్లోనే సులభంగా తయారు చేసుకోవచ్చు. పుల్లటి పెరుగు, మైదా పిండి, అల్లం, పచ్చిమిర్చి వంటి పదార్థాలతో తయారు చేసే ఈ బోండాలు బయట కరకరలాడుతూ, లోపల మెత్తగా ఉంటే తినడానికి ఎంతో రుచిగా ఉంటాయి.
కావాల్సిన పదార్థాలు
- పుల్లటి పెరుగు – 1 కప్పు
- మైదా పిండి – 1 కప్పు
- ఉప్పు – తగినంత
- వంట సోడా – అర టీస్పూన్
- నూనె – 1 టేబుల్ స్పూన్
- జీలకర్ర – 1 టీస్పూన్
- సన్నగా తరిగిన కరివేపాకు – 1 టేబుల్ స్పూన్
- సన్నగా తరిగిన అల్లం – అర టేబుల్ స్పూన్
- సన్నగా తరిగిన పచ్చిమిర్చి – 1 టేబుల్ స్పూన్
- గోరువెచ్చని లేదా వేడినీళ్లు – అవసరమైనంత
తయారీ విధానం
1. పెరుగు మిశ్రమం సిద్ధం చేయండి
ముందుగా ఒక వెడల్పాటి గిన్నెలో పుల్లటి పెరుగు తీసుకుని ఐదు నుంచి పది నిమిషాల పాటు బాగా గిలకొట్టండి. అనంతరం ఉప్పు, వంట సోడా, ఒక టేబుల్ స్పూన్ నూనె వేసి మరో రెండు నిమిషాల పాటు కలపండి.
2. పిండి కలపండి
ఇప్పుడు మైదా పిండిని కొద్దికొద్దిగా వేసి కలపండి. అవసరమైతే కొద్దిగా నీళ్లు జోడించండి. పిండి మరీ పలుచగా కాకుండా, బోండాలు చేతితో లేదా చెంచాతో వేసేందుకు వీలుగా చిక్కగా ఉండాలి.
3. మసాలా పదార్థాలు జోడించండి
పిండిలో జీలకర్ర, తరిగిన కరివేపాకు, అల్లం, పచ్చిమిర్చి వేసి బాగా కలపండి. అనంతరం పిండిని సుమారు 10 నిమిషాలు పక్కన పెట్టండి.
4. బోండాలు వేయించండి
బాణలిలో నూనె పోసి వేడి చేయండి. పిండిని చిన్న చిన్న ఉండలుగా తీసుకుని జాగ్రత్తగా నూనెలో వేయండి. మంటను మధ్యస్థంగా ఉంచి, బోండాలు అన్ని వైపులా బంగారు రంగులోకి మారే వరకు వేయించండి.
5. వేడివేడిగా వడ్డించండి
బోండాలు బాగా వేగిన తర్వాత నూనె నుంచి తీసి అదనపు నూనె పోయేలా ఉంచండి. కొబ్బరి చట్నీ లేదా అల్లం చట్నీతో వేడివేడిగా వడ్డిస్తే రుచి మరింత బాగుంటుంది.
బోండాలు మెత్తగా రావడానికి చిట్కాలు
- పిండిని మరీ పలుచగా చేయకండి.
- నూనె మరీ వేడిగా ఉంటే బయట త్వరగా రంగు మారి లోపల పిండి సరిగా ఉడకకపోవచ్చు.
- మధ్యస్థ మంటపై నెమ్మదిగా వేయించండి.
- బోండా లోపల కూడా పూర్తిగా ఉడికిందో లేదో నిర్ధారించుకోండి.
